Tree huggers ~

Hey, hey, hey nutty folks!  How is your first week of 2012 going??  Ours is going well!  I wanted to share an easy and delicious recipe with you.  I don't make this nearly as much as we would like.  It's definitely a family favorite.  




 Granola  

The recipe is so easy and so very tasty. 

Granola
  • 4 cups rolled oats (not the quick style)
  • 2 cups sweetened coconut
  • 2 cups slivered almonds
  • 3/4 cup vegetable oil
  • 1/2 cup good honey
  • bite size dried fruits of your choice


Preheat oven to 350 degrees

In a large bowl combine oats, almonds and coconut. 

In another bowl whisk the oil and honey until combined. Pour over oat mixture and toss until well coated. 






Pour out onto a parchment lined cookie sheet and place in oven.  After 15 minutes toss them on the sheet then place back in the oven for another 15 minutes.  Keep doing this until they are nice and golden brown.  Mine went for about 40 minutes.  


Cool, then add your favorite dried fruits.  I added apricot, apple, pear and plums.  You can also add any other nuts you would like.  Then, enjoy!  Make sure you have extra milk on hand!  This is so delicious we eat it for dinner!  :-) 


Tastes even better if you have a cute Kita Bug helper! 


Cleanup is much easier, also!

    Yummy! I love granola :) And Kita is definitely the best cooking assistant, since she is the official taste tester and dish licker!

    She is such a great helper. She probably was hoping there was going to be some butter involved! :-) Still, if Kita likes it you KNOW it's good!
